In a hands-on process, the finest fair-trade cacao beans are sorted and selected prior to processing into the award winning chocolate recipe. The time consuming proprietary process is all executed in house under the watchful eye of the master chocolatier in Arcata, CA. The entire process takes more than a month to complete but allows them to make some of the finest chocolate possible. By only using organic cacao and cane sugar, not cutting corners or taking shortcuts in their process, they are able to leave out vanilla, additional cocoa butter and other emulsifiers. This captures and highlights the subtle flavor nuances in the cacao that is sourced from plantations around the world.
